Founded as an "Asakusa- style restaurant" in 1925, it was opened as a ramen shop in Dec., 1965. We adhere to the simple six points: 1. Soup; a blend of dried bonito and shellfish based on chicken and pork bone stock. 2. Miso. Our secret recipe has remained unchanged for 40 years, passed down from one generation to the next. 3. Noodles are made for each order. 4. Chili oil is homemade from carefully chosen materials 5. Vinegar ; a blend of vinegar, rice vinegar and sake lees gives it a mild acidity, unlike regular grain vinegar. 6. Salt. Natural salt from Okinawa has a softness, and is rich in minerals.
